Fernando de Castilla Fino en Rama is a superb, unfiltered expression of traditional Fino Sherry produced by Bodegas Rey Fernando de Castilla in Jerez, Spain. Crafted by winemaker Maribel Vergara, this bottling captures the ultimate combination of raw power, delicate freshness, and intense complexity. Bottled straight from the cask with minimal filtration to preserve its authentic barrel-room character, it offers a serious, memorable taste of Andalusian winemaking mastery.. Why You'll Love It. This wine stands out for its unadulterated purity, vibrant yeastiness, and intense maritime salinity. Unlike standard Finos that undergo heavy carbon filtration, "En Rama" means the sherry is drawn straight from the solera when the protective layer of natural yeast (flor) is at its thickest in spring and autumn. The result is a deeper golden hue, a richer texture, and a thrillingly punchy aromatic profile that feels as if you are tasting directly from the barrel in Jerez.. Vineyard & Production. The Palomino Fino grapes are cultivated on the chalky, water-retaining Albariza soils of the Jerez district. Only the pristine first-pressing juice is selected to ensure a delicate, light style. Following temperature-controlled fermentation and malolactic conversion, the wine is fortified with grape spirit to 15 percent alcohol before entering the Solera system. The wine ages under a blanket of flor for an average of 4 to 4.5 years. To preserve maximum depth, the sherry is bottled largely unfined and unfiltered, marked with its precise bottling date.. Tasting Notes. In the glass, it displays a rich, pale golden colour that is noticeably deeper than standard filtered Finos. The nose leaps from the glass with lively aromas of fresh baker's yeast, warm bread dough, dried almonds, and bright citrus peel. On the palate, it is bone-dry, intensely savoury, and complex, delivering toasted nuttiness, a distinct salty tang, and a subtle, refreshing bitter twist that carries through to a long, savoury finish.. Perfect Pairings. Best served thoroughly chilled between 6 and 8 degrees Celsius, this En Rama Fino is an outstanding partner for savoury Spanish tapas. It pairs magnificently with salted Marcona almonds, olives, Jamón Ibérico, and salt cod (Bacalao).
