Why You'll Love It. This wine stands out for its rich aromatic complexity, expansive palate weight, and bone-dry precision. Unlike Finos or Amontillados that undergo biological aging under a veil of yeast, Oloroso is fortified to a higher strength from the beginning, intentionally preventing flor from forming and allowing direct contact with oxygen throughout its maturation. Matured carefully in seasoned American oak casks within the solera system, it delivers an extraordinary spectrum of roasted nuts, dried fruits, and wood spice without any residual sweetness, offering a truly sophisticated drinking experience.. Vineyard & Production. The Palomino Fino grapes are hand-harvested from high-grade vineyards planted on chalk-rich albariza soils in the Jerez region. The grapes selected for Oloroso typically come from pressings that yield a fuller, more structured base wine. After fortification to around seventeen percent alcohol, the wine enters the traditional criaderas y solera system for pure oxidative aging in old American oak barrels. Over several years, evaporation gradually concentrates the wine, enriching its dark colour, building a velvety texture, and imparting complex oxidative flavours before bottling.. Tasting Notes. In the glass, it presents a luminous dark mahogany colour with copper highlights. The nose is rich, expansive, and deeply aromatic, filled with scents of toasted walnuts, pecans, and dark hazelnuts, complemented by notes of dried figs, orange zest, antique oak furniture, and subtle tobacco leaf.
