Vineyard & Production. The spirit is produced using high-quality wine distillates (holandas) made from Airén grapes. These distillates are aged through the traditional solera system in the historic cellars of Jerez de la Frontera. The casks used for maturation are old American oak barrels previously seasoned with dry Oloroso and Amontillado sherries for many years. Over an extended aging period averaging more than twelve years, the brandy absorbs the dark wood tannins, oxidative nuttiness, and subtle sherry nuances from the oak before being carefully blended and bottled..
