Tabalí Talud Cabernet Sauvignon is a strikingly precise, fresh, and terroir-driven red wine produced in the exceptional Limarí Valley in northern Chile. Viña Tabalí is globally acclaimed as a pioneer of cool-climate viticulture, renowned for exploiting the unique limestone-rich soils and coastal fog influence of this extraordinary region. Derived from a specific hillside slope vineyard, known as a talud, this Cabernet Sauvignon breaks away from traditional heavy styles, offering remarkable structural elegance, bright mountain freshness, and vibrant dark fruit purity.. Why You'll Love It. This wine stands out for its vibrant energy, chiseled structure, and distinct mineral character. Grown on steep, sun-exposed hillside banks where cool coastal winds from the Pacific Ocean sweep through daily, the grapes undergo an extended ripening period that develops intense varietal flavour while preserving crisp natural acidity. Matured carefully in fine French oak barrels, it delivers a sophisticated, cool-climate expression of Cabernet Sauvignon filled with notes of blackcurrant, graphite, and dried herbs, backed by fine, chalky tannins.. Vineyard & Production. The grapes are hand-selected from the Talud block within the estate's coastal vineyards, where vines grow on steep alluvial slopes featuring rocky clay topsoil over ancient, chalk-rich limestone beds. Following meticulous hand-harvesting during the cool morning hours, the fruit is double-sorted, destemmed, and gently crushed into small stainless steel tanks. Fermentation occurs under strict temperature control with gentle pump-overs to ensure delicate extraction of colour and tannin. The wine is then matured for around twelve to fourteen months in French oak barrels (a combination of new and used) to build elegance and complex texture before bottling.. Tasting Notes. In the glass, it displays an intense, deep ruby-red colour with dark purple highlights. The nose is refined, complex, and lifted, opening with classic aromas of ripe cassis, dark plums, and black cherries, beautifully layered with subtle notes of graphite, pencil lead, dried thyme, and sweet cedar wood. On the palate, it is medium to full-bodied, sleek, and focused, offering concentrated dark berry flavours framed by firm, chalky limestone tannins and a vibrant streak of coastal acidity that extends into a long, savoury, and mineral-driven finish.. Perfect Pairings. With its fresh acidity, fine-grained tannic backbone, and cool-climate dark fruit core, this Limarí Cabernet Sauvignon is an outstanding food partner. It pairs magnificently with grilled ribeye steak with herb butter, roasted leg of lamb with rosemary, slow-braised beef short ribs, and pan-seared venison.
