Waterkloof's vineyards are positioned high above False Bay, facing directly onto the Atlantic Ocean at the southern limit of the Stellenbosch wine region. This very special site with its strong maritime influence, steep aspect, and unique soil profile allows for the production of truly fine wines. The estate follows biodynamic practices and natural winemaking methods led by Werner Engelbrecht, including open-top fermenters, whole bunch pressing, wild yeast fermentation, extended fermentation periods, and extra lees contact to maximize terroir character. Since the first vintage in 2005, the estate has garnered widespread praise and many awards. This is South African red wine with elegance, minerality, and biodynamic credentials.. Vineyard & Winemaking. Produced by Waterkloof Estate in Stellenbosch, South Africa. Vineyards are positioned high above False Bay on the upper slopes of Schaapenberg Mountain, facing the Atlantic Ocean. The estate follows biodynamic practices. Grapes are picked early in the morning when cool to preserve flavours. Bordeaux varietals are generally destemmed and Rhône varietals are fermented as whole bunches depending on stem ripeness. All red wines are fermented in open-top wooden fermenters with punchdowns twice a day maximum. The wine stays on the skins for 30-40 days before being pressed. All wines are fermented naturally without the addition of cultivated yeast.. Tasting Notes. Classically styled with notes of cassis and cedar. The seamless, elegant palate is encased by fine tannins.
