Circumstance Sauvignon Blanc is a rich, minerally, and exceptionally textured single-estate white wine produced by Waterkloof in Stellenbosch, South Africa. Adopting a natural approach to winemaking and living soils, Waterkloof crafts wines in their gravitational cellar that reflect a true sense of place. Sourced from windswept, high-altitude vineyards facing the Atlantic Ocean, this wine delivers an intense, rocky character that offers a memorable departure from standard Sauvignon Blancs.. Why You'll Love It. This wine stands out for its big, textured presence, complex wild-yeast fermentation, and distinct seaside salinity. Sourced from low-yielding 20 year-old vines grown just two miles from the ocean, it benefits from a slow, natural seven to eight month fermentation in old 600-litre oak barrels. Un-fined and crafted without added acids or enzymes, it exhibits fantastic mouthfeel, layered stone fruit notes, and a lingering minerality that truly captures its coastal terroir.. Vineyard & Production. The fruit is sourced from three windswept, south-facing blocks situated 270 to 300 metres above sea level and just two miles from the Atlantic. Low yields of four tons per hectare ensure concentrated flavours. In the gravitational cellar, whole-bunch pressing gently extracts the juice before natural settling for 24 hours. Fermentation relies entirely on wild yeasts, with 90 percent occurring in old 600-litre barrels over 7 to 8 months. The wine rests on its gross lees for an additional 6 months before receiving a light filtration and minimal sulphur prior to bottling.. Tasting Notes. In the glass, it reveals a pale straw hue with green highlights. The nose opens with expressive aromas of crushed laurel leaves and distinct nuances of residual seaside salt. On the palate, it exhibits a big, broad, and textured presence, delivering rich layers of ripe stone fruit balanced by hints of wild fennel. A firm, rocky minerality carries through the mid-palate, leading to a long, savoury, and refreshing finish.. Perfect Pairings. With its rich texture, ocean-influenced salinity, and bright mineral core, this biodynamic-leaning Sauvignon Blanc is an exceptional match for seafood. It pairs magnificently with fresh oysters, grilled crayfish, and seared shellfish.
