A very unique sake, made in very small batches, using the yeast extracted from Dandelion flowers. This harmonious Kijoshu style sake, substituting part of the water in the fermentation process with already made sake, brings forward sweet yet balanced flavours with umami and slightly bitter notes lingering with a rich and honeyed core. OUR TASTING NOTES: Rice and umami aromas with a honey-like sweetness meeting a hint of herbaceousness. On the palate a soft and creamy texture brings forward a sweet flavour of shortbread biscuit with honey, with a touch of peach meeting a pleasant bitterness and a lingering umami finish.
