PRACTICES: Vegan Friendly - Sustainable Wines TASTING NOTES A complex Chardonnay with white spice, pear and stone fruit aromas, while citrus fruit and peach entertain the palate. Natural salts found in the soils, present a delicate sensation of minerality in Baleia's food-driven wines and prepares the palate beautifully. PRODUCER PROFILE Established in 2009 by the Joubert family, Baleias ethos is to create wines that reflect the unique terroir and elements of their remarkable location. The true essence of Baleia is in the soil, consisting largely of pure, solidlimestone with a very high mineral content. The climate, defined by their proximity to the sea, creates a particularmouthfeel to the wines with a chalky minerality and maritime salinity. PRACTICES VINEYARD & VINIFICATION Handpicked, Limestone Soils, 5 degree facing slopes. Vivace yeast culture, fermented for 12 days in combinationof Amphora and older barrels. 11 months in combination of 50% Terracotta Amphora and 50% 300L 3rd and 4thfill 300L's.
