Sourced from a single, low-yielding vineyard block planted on weathered granite and clay soils, the vines benefit from cool mountain altitudes and maritime breezes off False Bay. Matured patiently in new French oak barrels, it delivers an opulent yet restrained profile of ripe cassis, black cherries, cedar, and pencil shavings, supported by fine-grained tannins that ensure decades of graceful aging.. Vineyard & Production. The grapes are hand-harvested from the estate's oldest and finest Cabernet Sauvignon block during the cool morning hours. Upon arrival at the cellar, the fruit is destemmed and gently crushed into temperature-controlled tanks. Fermentation takes place with regular pump-overs to extract deep ruby colour and complex structural tannins. Following malolactic fermentation, the wine is transferred entirely to new French oak barriques for an extended maturation period of twenty-four months. The finest barrels are then selected, blended, and bottled without fining to preserve absolute character.. Tasting Notes. In the glass, it displays a deep, opaque ruby-black colour with a dark purple rim. The nose is complex, commanding, and alluring, opening with classic aromas of ripe cassis, black cherries, and dark plums, interwoven with sophisticated notes of pencil lead, graphite, tobacco leaf, sweet cedar wood, and subtle baking spices. On the palate, it is full-bodied, structured, and harmonious, offering concentrated dark berry flavours underpinned by a vibrant beam of freshness and exceptionally fine, chalky tannins that carry into a long, savoury, and persistent finish..
