Matured briefly in oak barriques before undergoing a second fermentation to create its fine, persistent bubbles, it delivers an enchanting array of dark cherries, blackberry preserve, sweet vanilla, and subtle baking spice, backed by a refreshingly vibrant finish.. Vineyard & Production. The grapes are harvested from select low-yielding Shiraz parcels across McLaren Vale during the cool early morning hours to preserve freshness and fruit integrity. Following gentle crushing and fermentation in open-top tanks to extract rich colour and fine tannins, the base wine matures in American oak barrels for a period to build complexity. The wine then undergoes its secondary sparkling process, creating fine, lively carbonation while retaining the lush, opulent fruit character for which Mollydooker is famous before being corked and dressed for release.. Tasting Notes. In the glass, it presents a deep, vibrant ruby-purple colour crowned by a frothy, mousse-like crimson head.
