Sourced from estate vineyards situated on elevated mountain slopes, this Chardonnay captures a brilliant balance of bright citrus purity, stone fruit richness, and subtle French oak complexity.. Why You'll Love It. This wine stands out for its exceptional freshness, vibrant mineral edge, and seamless integration of fruit and oak. Grown in weathered granite soils that benefit from cooling afternoon shadows cast by the Simonsberg mountain, the grapes achieve a slow, even ripening process that locks in intense aromatic clarity. Partially barrel-fermented and aged on its fine lees, it delivers an inviting profile of ripe yellow peach, lemon zest, toasted almonds, and delicate brioche, offering a polished and harmonious palate.. Vineyard & Production. The grapes are hand-harvested from select estate vineyard blocks during the cool morning hours to preserve pure varietal character. Following whole-bunch pressing, a portion of the juice is transferred to French oak barrels for wild and inoculated fermentation, while the remainder is fermented in temperature-controlled stainless steel tanks to maintain bright fruit freshness. The wine undergoes regular battonage (lees stirring) in oak over several months to build mid-palate texture before final blending and bottling.. Tasting Notes. In the glass, it displays a radiant, pale lemon-gold colour. The nose is fresh, complex, and inviting, opening with aromas of ripe green apple, white peach, and zesty Meyer lemon, interwoven with subtle nuances of crushed hazelnuts, vanilla pod, and flinty minerality.
