Grapes are hand-harvested and fermented in stainless steel before ageing for 48 months on lees using the traditional method, producing a wine of remarkable complexity and finesse.. Meet the producer. Founded in 1988, Nyetimber is a pioneering English sparkling wine estate, renowned for producing wines exclusively from Chardonnay, Pinot Noir, and Meunier. Owner Eric Heerema and Head Winemaker Cherie Spriggs are committed to estate-grown, Grande Marque quality wines that reflect the unique terroir of Sussex.. Production. The Tillington vineyard is carefully managed to optimise sunlight capture and ripeness. Grapes are hand-picked, parcel by parcel, and fermented in stainless steel before extended lees ageing for 48 months. This meticulous approach ensures depth, texture, and complexity in the finished wine.. Tasting notes. Light gold in colour, with aromas of wild strawberry, white blossom, pastry, and praline.
