Tasting Notes. Wine Profile:Sourced from select high-altitude vineyards on the Vergelegen Estate in Stellenbosch, the Premium Sauvignon Blanc reflects the region’s cool maritime influence and the estate’s precision viticulture. This wine captures the purity, vibrancy, and aromatic intensity typical of top-tier South African Sauvignon Blanc, delivering a crisp and expressive profile with elegance and depth.. Appearance:Pale straw with a vibrant green tint, showcasing its youthful freshness and clarity.. Nose:A lively and aromatic bouquet of gooseberry, passionfruit, and fresh lime zest, layered with subtle herbal notes of cut grass and green bell pepper. Underpinning this is a minerally edge reminiscent of crushed stone and sea spray, adding complexity and precision.. Palate:Zesty and invigorating, the palate reveals concentrated flavors of citrus, green apple, and tropical fruit, balanced by a steely acidity and a chalky texture. Hints of lemongrass and flint lead to a dry, clean, and persistent finish that leaves a refreshing impression.. Food Pairing:A natural partner for fresh oysters, citrus-dressed seafood salads, or grilled line fish. Also pairs beautifully with goat cheese, asparagus risotto, or Thai-style green curries featuring lemongrass and coconut milk.. Cellaring Potential:Best enjoyed young to appreciate its vivid fruit and crisp minerality, but will evolve gracefully over 2–4 years, gaining complexity and a slightly richer mouthfeel.
