Chateau de Pommard is a historic 20-hectare walled estate in the heart of Pommard, owned by the Carabello-Baum family since 2014. Vivant (Living) represents their commitment to biodynamic viticulture and sustainable winemaking, farming without synthetic chemicals to preserve soil health and biodiversity. This village-level Pommard comes from organically farmed parcels. The 2016 vintage in Burgundy was excellent, producing structured wines with freshness, and this has evolved beautifully. Red cherry, raspberry and cranberry with forest floor, leather and earthy complexity. Medium bodied with silky, resolved tannins and bright acidity. The fruit has moved into tertiary territory with mushroom, tobacco and subtle game notes. There`s elegance here despite Pommard`s reputation for power, showing refinement and balance. Long, savoury finish. Serve at room temperature (16-18°C). Decant for 30 minutes to let it breathe. Pairs beautifully with duck, game birds, wild mushrooms, or aged cheeses. Drinking at its peak now, enjoy over the next 3-5 years.
