Location: The Kleine Kalmit is a 270-meter high hill, formed during the subsidence of the Upper Rhine Graben in the Tertiary period. Porous limestone serves as the base, with alternating upper soils such as loess, marl, and loam, making this terrain unique. Since 2008, the Ilbesheimer KALMIT has been classified as a single vineyard in the register of the great old vineyard names. Since 1971, the vineyard catalog was expanded to include a geologically homogeneous single vineyard, a historic achievement for Ilbesheim that makes us very proud. VDP.Grosse Lage Ilbesheimer KALMIT - south-facing slope of the Kleine Kalmit, our flagship. The underlying landsnail limestone beds I and II, with a mixture of clay and marl soils between them, make this vineyard unique. The southern slope ensures sunlight throughout the day, optimal conditions for characterful, ripe wines. Wine: Fine, highly elegant Spätburgunder with much salty, mineral tension. Red fruits, classic, cool, and juicy. Subtle spiciness and noble tannin structure provide clarity and length to the wine. Aromas of sour cherry and currant. Soil: A vineyard with extremely high limestone content in the marl and loess soils. Vinification: Selective handpicking. Gentle maceration and spontaneous fermentation. Manual punching down. Aged for two winters in used barriques. Unfiltered bottling. Aging potential: 10 years and more. Food paring: Chateaubriand, game dishes like venison schnitzel or roe deer medallions, grilled vegetables. Serving temperature: Around 16°C. Alcohol: 13,0% vol Acidity: 5,7 g/l Residual sugar: 0,5 g/l.
