The development of the wine goes as follows: first the grapes are picked by hand, selected and then macerated on their skins. After complete maceration, the grapes are pressed by a pneumatic press. The juice that remains is prepared for debourbage. This process removes solid particles in the wine, such as pips and other impurities. After debourbage there is a period where the juice is cooled, this happens at a temperature of approximately 8 degrees. The wine is then fermented in oak barrels at a fixed temperature of 16 to 18 degrees Celsius. After this, the white wine is stabilized and prepared for consumption, this happens after fermentation.The flavor characterLes Bretèches White is a lively, impeccable and complex wine. This delicious wine has fresh aromas with subtle notes of white flowers, honey, fresh melon, exotic fruit with hints of peach and muscat. The wine is fresh on the palate and balanced. The Muscat provides an exotic touch, the Sauvignon blanc reveals fruity and mineral notes mixed with fresh mango and exotic apricot.This wine is perfect to combine with a Lebanese salad, mezze dishes such as humus, taboulé, fattouche. It is also delicious with oysters, mussels cooked in white wine and grilled fish.
