PRACTICES: Organic Certified - Vegan Friendly - Sustainable Wines TASTING NOTES Bright citrus and toasty aromas, accented by subtle exotic nuances, open into a refined and expressive wine. Onthe palate, it reveals a core of vibrant fruit framed by pronounced mineral tension and elegance. The bubbles are delicate and the mousse is fine and persistent, adding to its precision and length. This is a striking, beautifully balanced wine with depth and character thats sure to surprise and impress. PRODUCER PROFILE The Domaine follows organic practices and has undertaken soil studies of their vineyards to help fully express the qualities of each site. New plantings are done using cuttings from the oldest vines in Fourchaume. Vinification is done on a parcel by parcel basis and with minimal intervention, with the goal to express the aromatic intensity ofeach parcel. Michels aim is freshness with only some wines under going partial malolactic fermentation; oak isused sparingly and more as a seasoning. The result is a creamy, round and savoury style with tension and chalky minerality running throughout. PRACTICES VINEYARD & VINIFICATION The grapes are handpicked from organically certified vineyards rooted in limestone and clay soils, which contribute to the wines structure and minerality. Fermentation is carried out using only natural yeasts in stainless steel vats over a period of two months, all owing for a slow, controlled development of aromas and complexity. The wine is then aged on lattes for 30 months, enhancing texture, depth, and refinement before release.
