Upon arrival at the cellar, the fruit is destemmed and gently crushed into temperature-controlled stainless steel vats. Fermentation takes place with regular pump-overs to extract rich colour and complex structural tannins. Following malolactic fermentation, the wine is transferred to French oak barrels (a combination of new and seasoned wood) for an eighteen-month maturation period before careful blending and bottling..
